Butternut carrot ginger soup

 

 

 

 

 

 

Serves 3 – 4

1 C carrot juice

2 C butternut, roughly chopped

½ avocado

1 T olive oil

½ t Himalayan rock salt

½ C apple juice

½ C warm water

1 clove garlic

¼ C cashews

1 cm piece ginger

1 t cumin

½ t cayenne pepper

Blend all the ingredients together in a power blender.
